Salmon with sour red cabbage noodles and dill sauce

Ingredients

  • 2 st salmon portions
  • 2 st lemon + zest
  • 0.5 dl white wine
  • 2 tablespoons sugar
  • 1 bunch of dill
  • 1 small wedge of red cabbage
  • 200 g wide rice noodles
  • 5 cm Cucumber
  • 75 g sugar snap peas
  • 1 pc spring onions
  • 1 dl crème fraiche
  • 1 tbsp fish sauce

Proceed as follows

1.

Cook the noodles according to the instructions on the packet, drain and cool under running water.

Mix the crème fraîche, lemon zest and dill in a bowl.

Mix the white wine, fish sauce, lemon juice, sugar and thinly sliced red cabbage. Leave it to soak in a bowl.

Core the cucumber and chop it finely, along with the spring onions.

Place the salmon in a deep dish and microwave for 1.5-2 min at 400w

Remove the salmon and pour over the crème fraîche mixture.

7.

Mic the fish again on 400w for about 4 min.

8.

Toss the noodles and red cabbage mixture in a frying pan, finish with cucumber and spring onions.

9.

Serve the noodles on a plate with the fish. Drizzle over the sauce and finish with a wedge of lemon and a few dill sprigs. Also goes well with some toasted pine nuts.
