Korian miso salmon with shiitake mushrooms and jasmine rice

Ingredients

  • 2 st salmon portions
  • 2 tablespoons miso paste
  • 1 tbsp GoChuJang soya
  • 2 tablespoons Korean soya (or Japanese soya)
  • 75g cocktail tomatoes
  • 1 tsp sesame oil
  • Butter for frying
  • 100g spinach
  • 2 dl jasmine rice
  • 2 tablespoons honey
  • 2 tablespoons rice vinegar
  • 1 tsp grated ginger
  • 200g shiitake mushroom
  • 1 pc spring onions

Proceed as follows

Set the oven to 195° C

Cook the rice according to the instructions on the pack

Mix Miso paste, GoChuJang, honey, sesame oil, rice vinegar and soya in a bowl

Brush the salmon with the marinade and place in the oven.

5.

Divide the mushrooms into equal pieces and fry in oil over medium heat.

6.

Add the tomatoes to the pan and at the end toss in the spinach, shredded spring onions and the rest of the marinade.

7.

Serve everything on a plate and sprinkle with toasted sesame seeds
