Cod with egg & parsley sauce and buttered potatoes & peas

Ingredients

  • 2 st cod portions
  • 300g small potatoes
  • 100g frozen peas
  • 2 tablespoons Butter
  • 1 dl Crème fraîche
  • 2 egg
  • 1 bunch of parsley
  • lemon+zest

Proceed as follows

1.

Boil two eggs for 7 minutes, then cool them down in cold water.

Rinse the potatoes and then boil them in salted water

Mix the crème fraîche, parsley, and lemon zest, then chop the eggs into smaller pieces and mix them into the blend.

Place the cod in a deep dish and microwave for about 1.5 minutes at 400W.

Remove the cod and pour over the egg and parsley mixture, then microwave for 4 minutes at 400W.

6.

Put the peas in a bowl and pour over the boiling water from the potatoes when they are ready.

7.

Add a knob of butter to the potatoes, along with some chopped parsley, and toss gently.

8.

Drain the water from the peas and add a knob of butter.
L

9.

Serve everything on the plate with a lemon wedge and a few sprigs of dill.
